Excellent investment! During my "French cuisine" phase I realized my pots and pans weren't cutting it. After much research I decided the best quality for the money was Viking. Their pots and pans are substantial but not too heavy to be a burden lifting around the kitchen. The handles have extra heavy handle that look like they will last forever. I presume they contribute to the great balance. The 7 layers of aluminum conduction along with overall heft do make a difference...the pots heat up quickly for boiling and the chef/saute pans react quickly to heat adjustments. Clean-up is easy, dishwasher safe, but I add a big splash of cheap white vinegar to deglaze if not already making a sauce with the yummy stuck bits. BarKeep's Friend is good for drastic messes.
Yes, they are expensive, but if you invest in what you use the most... for me, 2 small to mid-sized pots plus a mid-sized chef's pan... you can fill in the rest with less expensive brands and/or add more over the years.
For comparison's sake, I have also owned Le Creuset (so pretty, but ridiculously hard to maintain and way too heavy as pots n pans- but they have the best Dutch Ovens for long oven roasts). Caphalon & Cuisinart (seriously inferior to Viking in performance and wear n tear (they scratch easily) ...but Caphalon is the best for non-stick fry/grill pans & Cuisinart makes great tools and appliances. All-Clad's Master Chef was a cheap disappointment- the REAL All-Clad is another exc investment tho considerably more than Viking. I almost went copper but it was so expensive to get the 2.5mm stainless lining in Falk, Bourgeat or Mauviel. They were also heavier, not as well balanced, impossibly hard to maintain despite Falk's brushed finish, tho, sigh, just one omelette pan and saucier would be nice. For baking fish and other 20-40 minute oven ventures without a prior stovetop visit, I discovered Emile Henry is worthy of its high price tag - the enamel coating is super thick and smooth and nothing sticks to it while the earthenware cooks very evenly. I have just 2 and sometimes use them together to stretch capacity.
In sum, there is no one brand that does it all perfectly. I now have a mixed collection chosen by brand for the best purpose they offer, plus some cheapies for very occasional use. For basic pots and pans, I know my Viking will truly last a lifetime and had I only known sooner I would have saved a lot of money through the years.
